Yields: 1 serving
Ingredients:
1 uncrust or gluten-free pizza base of choice
1/4 c cashew mozzarella
3/4 cups broccoli florets
1/2 zucchini
1/4 c extra-virgin olive oil
garlic clove
1/4 chopped basil
1/4 chopped parsley
1/4 c toasted pumpkin seeds
2 tsp lime juice
Pinch of sea salt
Directions:
- Food process basil, parsley, toasted pumpkin seeds, garlic, extra-virgin olive oil, lime and sea salt
- Spread on uncrust pizza base
- Sprinkle with cashew cheese
- Top with broccoli & zucchini
- Bake at 350 degrees for 15 minutes.
Notes:
Substitute step 1 with pre-made pesto or extra-virgin olive oil with garlic to simplify. Top with alternate vegetables like mushrooms, peppers, arugula, spinach for variety and taste preference.
