Yields: 4 servings
Ingredients:
1 sweet potato (spiralized or diced)
1 c broccoli microgreens
1 head organic green leaf lettuce (chopped)
3 organic radishes (chopped)
1/4 c organic hemp seeds
1 tbsp organic avocado oil
3/4 extra virgin olive oil
1 tbsp dijon
1/2 tsp sea salt
1 shallot (chopped)
1 tbsp organic rice wine vinegar
1 tbsp organic apple cider vinegar
1 drop of maple syrup
Directions:
- Prepare sweet potato, drizzled avocado oil and 1/4 tsp sea salt to air fryer for 12 minutes, shaking occasionally
- Add green leaf lettuce, microgreens, radishes and hemp seeds to salad bowl
- Prepare dressing with evoo, dijon, remaining sea salt, shallot, vinegars and maple syrup to mason jar
- Toss dressing in salad and top with sweet potato
Notes:
Optional to add/substitute celery, red cabbage, peppers or other favourite raw veggies to salad.
