Cooking Time: 25 minutes
Yields: Pizza for 2

Ingredients:

1 tbsp extra virgin olive oil

1 zucchini spiralized or sliced

1 clove garlic

1 tbsp oregano

1 c organic pizza sauce (sugar free)

1 c cashew mozzarella

1/2 c yellow or green pepper

1 c sliced mushroom

1/4 cup chopped basil

1/4 tsp sea salt

1/2 tbsp nutritional yeast

Directions

  1. Preheat oven to 400 degrees
  2. Heat olive oil over medium heat
  3. Saute zucchini, garlic and oregano in oil for 5 minutes
  4. Pour over tomato sauce and layer with cheese, peppers, mushroom
  5. Bake for 20 minutes and top with sea salt and nutritional yeast.

Notes

This version is vegan, add toppings of choice based on food preference.
