Yields: Pizza for 2
Ingredients:
1 tbsp extra virgin olive oil
1 zucchini spiralized or sliced
1 clove garlic
1 tbsp oregano
1 c organic pizza sauce (sugar free)
1 c cashew mozzarella
1/2 c yellow or green pepper
1 c sliced mushroom
1/4 cup chopped basil
1/4 tsp sea salt
1/2 tbsp nutritional yeast
Directions
- Preheat oven to 400 degrees
- Heat olive oil over medium heat
- Saute zucchini, garlic and oregano in oil for 5 minutes
- Pour over tomato sauce and layer with cheese, peppers, mushroom
- Bake for 20 minutes and top with sea salt and nutritional yeast.
Notes
This version is vegan, add toppings of choice based on food preference.
