Yields: 2 Servings
Ingredients:
1/4 tbsp extra virgin olive oil
1 bunch broccoli
1 clove garlic
2 cups spinach
1 c sliced mushrooms
1/2 c sliced red pepper
1 package shirataki noodles (I like the Miracle Noodle brand)
2 c raw wild shrimp
1 egg
1/4 cup chopped cilantro
2 tbsp cashew butter
2 tbsp cocaminos
1/4 tsp sea salt
1/2 fresh lime squeezed
1/2 tbsp nutritional yeast
Directions
- Heat 2 tbsp olive oil over medium heat
- Saute chopped broccoli, mushrooms, red pepper and minced garlic in oil for 5 minutes
- Prepare shirataki noodles per package instructions
- Move vegetables to one side of the pan and saute shrimp for 1 min per side
- Add shrimp to the vegetable side and scramble one egg (3 minutes)
- Whisk remaining olive oil, cocaminos, cashew butter, sea salt, lime and nutritional yeast in a bowl
- Pour whisked sauce into pan and toss with all ingredients.
- Transfer to bowl and top with fresh cilantro
Notes
Optional toppings include chopped cashews, chopped green onions and fresh basil instead of cilantro.
