Yields: 2 Servings

Ingredients:

1/4 tbsp extra virgin olive oil

1 bunch broccoli

1 clove garlic

2 cups spinach

1 c sliced mushrooms

1/2 c sliced red pepper

1 package shirataki noodles (I like the Miracle Noodle brand)

2 c raw wild shrimp

1 egg

1/4 cup chopped cilantro

2 tbsp cashew butter

2 tbsp cocaminos

1/4 tsp sea salt

1/2 fresh lime squeezed

1/2 tbsp nutritional yeast

Directions

  1. Heat 2 tbsp olive oil over medium heat
  2. Saute chopped broccoli, mushrooms, red pepper and minced garlic in oil for 5 minutes
  3. Prepare shirataki noodles per package instructions
  4. Move vegetables to one side of the pan and saute shrimp for 1 min per side
  5. Add shrimp to the vegetable side and scramble one egg (3 minutes)
  6. Whisk remaining olive oil, cocaminos, cashew butter, sea salt, lime and nutritional yeast in a bowl
  7. Pour whisked sauce into pan and toss with all ingredients.
  8. Transfer to bowl and top with fresh cilantro

Notes

Optional toppings include chopped cashews, chopped green onions and fresh basil instead of cilantro.
