Yields: 3-4 servings
Ingredients:
1 duck breast
1 large sweet potato (diced)
1 head organic mixed greens (chopped)
1 avocado (chopped)
1/4 c organic pumpkin seeds
3/4 extra virgin olive oil
1 tbsp dijon
1/2 tsp sea salt
1 shallot (chopped)
1 tbsp organic rice wine vinegar
1 tbsp organic apple cider vinegar
1 drop of maple syrup
Directions:
- Pan fry duck breast in skillet for 6 minutes on medium heat
- Flip duck breast and add sweet potato to skillet surrounding duck for 6 minutes
- Remove duck and slice while frying sweet potato in duck fat for 4 additional minutes, stirring occasionally
- Add mixed greens, avocado and toasted nuts or seeds to salad bowl
- Prepare dressing with evoo, dijon, remaining sea salt, shallot, vinegars and maple syrup to mason jar
- Toss dressing in salad and serve with duck and sweet potato

Optional to add/substitute celery, red cabbage, peppers or other favourite veggies to salad.
